Basic Recipe
Add to your food processor or blender and blend until smooth:
- 1 medium-sized ripe banana
- 2 eggs
- ½ t baking powder
- 1/3 cup instant oats
Add a bit of oil or butter to a pan, pour into 4 small pancakes—and cook for one minute on each side.
Personalize Your Pancakes
The general recipe above can easily be personalized. For example, I love to add a bit of cinnamon before blending. You could also top with nuts, peanut butter, fresh fruit, a cream cheese frosting, powdered sugar, Nutella, Maple syrup, or anything you would top your usual pancakes with.
Are Oats Gluten-Safe?
Some with celiac disease or gluten-sensitivity avoid oats because they fear that it is processed in a plant with other gluten grains. To ensure purity, purchase a brand labeled gluten-free such as Bob’s Red Mill.
